El nombre Ceviche proviene de los quechuas, conocido como “Siwichi” (pescado fresco y tierno). La base para el ceviche es un buen pescado fresco. El signo de marca, remite con su forma circular al plato donde se sirve ceviche; y la textura de su interior representa el mar. Los peruanos para hacer un rico ceviche, necesitan de un pescado fresco. Alguno de los cocineros, son ellos mismo quienes pescan y lo cocinan el mismo día que pescaron.
